This week we got the regular fruit/veggie basket plus the Mexican Pack. My handsome husband whipped up some green salsa tonight and it was oh so good!
The produce we used from our BB to make this salsa: tomatillos, onion, garlic, cilantro, and jalapeno peppers.
He found the recipe here: http://busycooks..about.com/od/condimentsjamsjellies/r/greensalsa.htm and made a few adjustments. The recipe is below is with Chase's adjustments:
6-8 tomatillos, husked and rinsed
1 onion, chopped
2 cloves garlic
One bunch chopped cilantro leaves (no need for a knife, just use a pair of scissors)
2 small jalapeno peppers, chopped and seeded
1 tsp salt
1/8 tsp fresh black pepper
1/2 tsp dried oregano leaves
1/2 tsp ground cumin
1/4 cup extra virgin olive oil, divided
1/3 cup water
Preparation:
Cut tomatillas into quarters. In a blender or food processor, place tomatillas, onion, garlic, cilantro, jalapeno peppers, salt, pepper, oregano, cumin, 2 tablespoons olive oil, and water: process until slightly chunky.
In medium saucepan over medium heat, heat remaining olive oil. Add tomatilla mixture and simmer for 10 to 12 minutes, stirring frequently, until slightly thickened. Remove from heat and pour into serving bowl. Cover and let stand 1-2 hours to blend flavors. Serve warm or cold.
This recipe was really simple and fast to make. All he got dirty was a cutting board, knife, blender, measure cup/spoon and pan. It took him about 5-10 prep time and then 10-12 minutes to cook it. It tasted really good fresh out of the blender without even cooking it, so you could skip that step if you want to. Cooking it helped blend the flavors - yum yum!. Now excuse me while I go eat me some chips and salsa.....
